You will need these really boosting ingredients for preparation of the recipe. 2 medium sized zucchinis, washed and cut into thin slices (rounds or semicircles), a few leaves of fresh basil, washed and chopped roughly ( you can add more if you like its flavor), 1 medium sized green onion, thinly sliced, ½ teaspoon dried thyme, 1 teaspoon garlic powder or minced garlic, 1 cup of any low fat cheese of your choice (pizza cheese work best as it is a combination of Mozzarella, Provolone, Romano and Parmesan), ¼ cup of freshly grated low fat Parmesan cheese, Salt and black pepper as required to taste.
Method of preparation
Before beginning the actual process, preheat the oven to 180C/ 350 F. Use an 8” by b 8” round baking tin for this recipe and drizzle a bit of olive oil or nonstick cooking spray on it and spread it evenly. Next, wash the zucchini and slice it finely. Peel the onions and slice them too. Wash the basil and dry it either using a spin dryer or a paper towel and chop it roughly and keep aside.
Take a large bowl and add the chopped vegetables, garlic powder/mince, dried thyme, seasonings, basil, both the cheeses and mix well. Reserve a little bit of cheese to garnish later on. Combine all the ingredients well till all the ingredients are well coated with the cheese and spices. Slowly transfer this mixture completely into the greased baking dish and spread it evenly and bake it in the oven (uncovered) for 20- 30 minutes.
When the zucchini is almost cooked, and the cheese has melted nicely, take the baking dish out of the oven and sprinkle the remaining cheese on top. Now, carefully put the baking dish back in the oven and bake for an additional 5-10 minutes or until the cheese has nicely melted with a brown tinge and the zucchinis are cooked perfectly. Serve it warm. You can even store it in the fridge and consume it the next day. Be sure to warm it to relish the cheese and zucchini bake.
